  • Preparation time         20 mins
  • Give yourself time      30 mins (plus 1 hour to 1 ½ hours fridge setting time)

You will need

8” square cake tin         Grease proof paper
Scissors                        Sauce pan
Weighing scales            Spatula
Teaspoon                      Knife
Chopping board

Ingredients

300g digestive biscuits crushed (use GF or your preferred dietary type)
150g dried mixed fruits (cranberries, sultanas etc)
250g dark chocolate broken into pieces (or use vegan alternative)
150g butter (or vegan alternative)
150g soft brown sugar
1 teaspoon mixed spice

Method

  1. Cut the greaseproof paper so it will fit inside the bottom and up the sides of your tin (no need for neatness!)
  2. In the saucepan, GENTLY melt together the chocolate, butter and sugar – Key don’t let it bubble at all
  3. Stir in the crushed biscuits, mixed fruit and mixed spice to combine well
  4. Spoon the mixture into the lined tin and make as even as can without crushing everything
  5. Put into the fridge for a minimum of 1 hour
  6. When set, take out of the tin, remove the paper and carefully cut into bite-sized chunks
  7. Store in an airtight container (if you can before it is all eaten!)

You Did It!  Celebrate & Remember – Whatever You have made – IT IS RIGHT!

Hints & Tips

To help keep the greaseproof paper in, use a dot of butter under each corner to stick it down
Crush the biscuits in a bag or in a tea towel – keep chunky and not like breadcrumbs

Be gentle with the chocolate mix when heating, take your time!!

Ways To Change

Try different biscuits, flavours and textures
Mix the dried fruits up, go mad!
Flavoured dark chocolate also works well
For the adults, add a drop of rum or brandy to the melted chocolate!
